2 cups pitted dates (or date paste)
½ cup tahini
½ teaspoon cardamom
½ cup unsweetened shredded coconut

Optional for different flavors:
Hunk of fresh ginger - peeled & grated
1 tsp lemon or lime juice or zest
1 tsp raw cacao powder

Directions:

Blend all in food processor except coconut. Divide into balls. Roll in unsweetened shredded coconut.
