3 cups assorted hot peppers (they use a mix of habaneros, cayenne, jalapeno, hungarian and more), stems removed and chopped
2 cups apple cider vinegar OR white vinegar (taste changed depending on your choice)
1 cup water
1 Tbs. salt

Mix all in a pot and bring to boil, reduce heat to simmer about a half hour until your eyes water.
Puree in Blender.

Debbie Rudman and her husband Jim Brossy are artists, filmmakers, beekeepers and avid gardeners in Port Richmond. Jim built a gorgeous greenhouse in their back yard where they grow all sorts of exciting vegetables, herbs, flowers and other plants. They gave me a bottle of their homemade hot sauce made with peppers from their harvest and it's delicious.

Here are Debbie's notes:

We added honey to one batch & with our bumper crop of garlic also added that with some honey to a third batch

Early season hotsauce uses more green hot peppers and is not quite as hot, later season hotsauce uses more red peppers and is hotter. Sometimes I'll add sweet peppers to balance it out a bit if there are too many habaneros.

Each batch has its own flavor depending on the mix of peppers.
