1 lb phyllo
1 large onion, chopped
1 bunch of green onions, chopped
2 lb bag or 4 small boxes of spinach, thawed and drained well
1 small container of ricotta cheese
2 cups of feta cheese
¾ cup of Parmesan cheese
4-6 eggs, beaten
~3 tbsp of dill
Pepper
2 sticks of butter

Preheat oven to 350º

Preparation:
1. Sautee onion and green onion in butter and olive oil
2. In a bowl, mix spinach and onion together
3. Add cheeses and eggs
4. Add pepper
5. Add dill

Assembly:
1. Melt butter
2. Brush bottom of a pan with butter
3. Lay phyllo and brush each sheet with butter- 10 sheets
4. Add spinach/cheese mixture
5. Butter then layer phyllo & butter- 10 sheets
6. Stick sides in
7. Let rest for a few minutes
8. Cut into squares

Bake:
1. Sprinkle with cold water right before cooking
2. Bake for 30-40 min or until brown

Can freeze once finished with step 8 under assembly
- put a layer of wax paper on top then wrap with aluminum foil
- when ready to cook, uncover, sprinkle water and put in oven frozen and uncovered
