12 oz. Rigatoni
1 lb. Sage Sausage
1 c. diced Onion
1 jar Salsa
2 - 8 oz. packages Shredded Monterey Jack Cheese (or Mexican Cheese)
1 diced Tomato
Cilantro
Jalapeno's
Sour Cream

Directions:

Preheat oven to 350º

Lightly grease a 3 quart rectangular baking dish.
Cook pasta according to package.
In skillet, combine the sausage and onion. Cook until no longer pink and drain the grease.
Stir in the salsa.

In the prepared dish, layer half of the cooked pasta, half of the sausage mixture, and half of the cheese. Repeat the layers.

Bake, uncovered, 35 minutes or until bubbly. Let stand 10 minutes.

Top with cilantro, jalapeno and tomatoes.
