Ingredients: 3/4 c. sugar 1/2 c. butter 1 (1-oz.) square unsweetened chocolate 1 tsp. vanilla 2 eggs 1 8 or 9-in. baked pie crust

Directions:Melt chocolate and let cool slightly. Cream butter and sugar thoroughly. Blend in chocolate and vanilla. Add eggs, one at a time, beating 5 minutes after each addition, using electric mixer at medium speed. Turn into cooled pie shell. Chill 1-2 hours. (For a fuller pie make one and one half times the recipe.) Serve with whipped cream. |

Notes: I copied this from Mom's recipe box when I was in college, but I never made it. When I began making pies, I found the recipe in my recipe box. It is now one of my staple pie recipes. It is very important to use real butter that has not been softened. It is also very important to actually beat the filling for 5 minutes after each egg is added. This creates the fluffy texture of the pie. For my personal version of the pie, I always make whipped cream and spread it over the cooled pie, then dust the top with unsweetened cocoa powder.
