Ingredients: 1 stick butter, room temp 1 cup sugar 2 eggs + 1 egg white 1 tsp vanilla 2 cups flour 1 tsp baking powder pinch of salt Zest of 1 lemon 1/2 cup whole blanched almonds. toasted 3/4 cup dried cherries 2 TBL turbinado sugar Optional: chocolate ganache, mini pretzels, red & green sprinkles

Directions:Preheat oven to 300 Combine butter & sugar until light and fluffy, scraping down the sides periodically, about 3 minutes. Beat in eggs, 1 at a time. Add vanilla. Gently mix in flour, baking powder, salt and lemon zest. Gently fold in the almonds and dried cherries. Divide the dough into two. Shape each into a long the length of your baking pan. If the dough sticks, dust with flour. Beat the egg white with a splash of water, brush each log and sprinkle with the turbinado sugar. Bake 30 minutes. Remove from oven and let cool for 10 minutes. Remove each log to a cutting board. Slice each log into 3/4 inch slices. Lay the biscotti back onto the baking pan and return to the oven for 10 minutes more. This will harden the biscotti. Cool on rack. You could dip each end in chocolate or drizzle with chocolate, |

Notes: I love these !! One year we made a trip with Mary and the girls to NYC, spending the weekend with Peggy and Lisa. Billy and Cindy (Mary's brother and wife) joined us for the day too. We saw Brad Pitt in the lobby of a hotel!! I made favors for our adventure - little Christmas stockings of felt and fur, with a biscotti in each!
