1 stick of Margarine
3 T Dijon mustard
1 clove garlic
1/3 c minced parsley
1 c freshly grated parmesan
2 c soft bread crumbs (we like Italian bread crumbs)
6 half chicken breast, boneless and skinless

Directions:
Directions:
Preheat the oven to 350°
Lightly pound the chicken breasts to flatten slightly
Melt margarine in a saucepan. Blend in mustard and garlic.
Remove from heat and stir well
In a shallow dish, combine the parsley, parmesan, and bread crumbs
Coat the chicken with the margarine mixture, then coat with the crumb mix
Lay chicken in a pan and bake until brown, about 30 minutes
