Whole chicken cut into pieces
Flour
Egg slightly beaten
Milk salt and pepper
Vegetable oil

Directions:
Directions:
Preheat oven to 350º. Place beaten egg and small amount of milk (maybe a tablespoon) in a shallow bowl. Roll chicken in egg to cover then dredge in flour. Place chicken in cast iron skillet that has about ½ in of hot oil in it. Fry chicken til brown on each side. While chicken is frying place a cooling rack on top of a cookie sheet. Remove chicken from skillet and place on cookie sheet in oven til cooked through.
*Eat with lots of Franks RedHot Sauce*

Mom always fried chicken in the oven growing up. It made a huge mess in the oven. I know this because I often cleaned that oven! Fun times! Mom usually served fried chicken with mashed potatoes, green beans, sliced tomatoes, sliced cucumbers (sitting in salty ice water), oven baked mac and cheese or with fresh greens.
