2 or 3 garden fresh tomatoes
zucchini and yellow squash sliced in coins then quartered
1 or 2 fresh ears of corn (cut kernels from cob then milk cob with your knife to get all the juice)
1 or 2 oz of spaghetti noodles broke in small pieces
*optional Ekrich smoked sausage sliced in coins
*carrot coins also optional

Directions:
Directions:
If using smoked sausaged, place in skillet and fry for couple minutes then add chopped tomatoes. Cook for couple minutes to allow liquid from tomatoes to appear. Add all veggies and cook couple more minutes.Mixture will be soupy until you add a small amount of broken spaghetti noodles. Cook til spaghetti is tender. Salt and pepper.

Mom made this as a side dish without smoked sausage and a main course with the smoked sausage. We usually had this to get rid of the over abundance of squash and tomatoes we always had in summer!
