1 pound bulk mild Italian sausage (or spicey if you like hot stuff)
1 medium onion, chopped
2 medium carrots, chopped
3 cloves garlic, finely chopped
2 cartons (32 oz each) chicken broth
1 package (9oz) refrigerated fresh cheese tortellini
1 bag (5 oz) baby spinach

Directions:
1. In large stock pot, cook, sausage, onion, carrots and garlic over medium heat (8 to 10 minutes) until sausage is thoroughly cooked; drain
2. Stir in broth; heat to boiling over medium- high heat (I cook until carrots are no longer crispy)3. Add tortellini; cook until tortellini are tender (approximately 8 to 12 minutes)
4. Stir in spinach and cook 2 minutes or until spinach is wilted
