¾ c. Uncle Ben's long grain rice
1 pint milk
¼ tsp. salt
¼ - ½ c. sugar
2 tsp. vanilla
¼ c. finely chopped almonds, blanched
1 whole almond
¼ pint whipping cream
1 can cherry pie filling or raspberry sauce

Directions:
Directions:
1. Bring milk to a boil and add rice, salt, and vanilla, while stirring. Turn down heat and stir until thickened and rice is done. Add sugar to taste; add almonds (chopped).
2. Boil mixture until thick. Let stand and refrigerate until cold or overnight.
3. Whip the whipping cream, but not too thick, just until it holds its shape softly.
4. Fold into rice mixture and mix well.
5. Put whole almond in last for some lucky person to find - brings good luck!
6. Chill again in serving dishes.
7. Serve cold with hot cherry pie filling or raspberry sauce.
