3 - 4 c. driedred kidney beans
2 - 3 large finely chopped onions
2 lbs. lean ground beef, fried, drained
1 qt. catsup
1 - 1½ qt. tomato juice
Salt to taste
2 tsp. chili powder
3 tbsp. brown sugar
1 tsp. black pepper

Directions:
Directions:
1. Wash dried red kidney beans, drain and cover with water.
2. Cook beans until tender, stirring occasionally. Add water if necessary, so beans don't boil dry.
3. Add finely chopped onions.
4. Cook lean ground beef in skillet until pink has faded. Add to beans.
5. Add catsup, tomato juice, and salt to taste.
6. Cook 10 to 15 minutes.
7. Add chili powder, more if you like.
8. Add black pepper and brown sugar.
9. Let simmer over low heat at least 1 hour, stirring often so chili doesn't settle and burn.
