1 1/2 loaves cinnamon raisin bread, cut into 1 inch cubes
8 eggs
2-3 cups milk
4 teaspoons sugar
1 teaspoon vanilla extract
3-4 teaspoon salt, optional


TOPPING:
2 tablespoons butter
3 tablespoons sugar
2 teaspoons cinnamon

Maple Syrup or fruit compote

Place bread cubes in greased 13 in x 9 in baking dish
In large bowl, whisk eggs, milk, sugar, vanilla
Pour over bread
Cover and refrigerate for 8 hours or overnight

Heat oven to 350º

Remove from refrigerator 30 minutes before baking
Dot with butter
Combine sugar and cinnamon; sprinkle on top
Cover and bake for 40-45 minutes or until knife inserted near center comes out clean
Let stand 5 minutes
Serve with Maple Syrup or fruit compote if desired
