1 pound ground beef
1/2 pound ground pork
1/2 pound ground veal
2 large clove garlic
2 eggs beaten
1 cup romano cheese (fresh grated)
1 1/2 Tablespoon flat (Italian) parsley (fresh)
1/2 teaspoon salt
1 teaspoon black pepper
1 medium/small finely chopped onion
2 cups stale Italian bread crumbles (see below for directions)
1 cup olive oil (for cooking)

MAKE BREAD CRUMBS:
1/2 large french loaf (makes 2 cups); slice, place on baking sheet - Bake 325 degrees until dry and hard. Put in food processor to make crumbs.

Meat Balls:
1. Combine meat, add garlic, onion, eggs, cheese, parsley, salt and pepper. Mix well
2. Blend bread crumbs into mixture
3. Slowl add water 1/2 cup a time. The mixture should be very moist but still hold its shape when formed not balls
4. Shape into balls
5. Heat oil in skillet, fry meatballs in batches. The meatballs are very brown (slightly crispy) remove from heat and drain on paper towel.

If your mixture is too wet, cover the meatballs while they are cooking so they hold their shape better.
