1/2 cup old fashioned or quick cook oats
1/2 cup all purpose flour
2 teaspoons baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1 teaspoon ground cinnamon
3/4 cup buttermilk
1 large egg
2 tablespoons canola, vegetable or coconut oil
1/2 teaspoon vanilla extract

1. Place first 6 ingredients in blender

2. Pulse for 30 seconds or until oatmeal becomes fine

3. Add remaining ingredients and pulse for combine, about 15 seconds

4. Heat a saute or grill pan for medium heat

5. Pour 1/4 cup batter for each pancake. Allow pancakes to cook for about 2 minutes or until top starts to bubble.

6. Flip over and cook an additional 30 seconds or until pancake is cooked through

7. Serve with maple syrup, honey, fruit compote, whipped topping
