1 c. shortening
½ c. brown sugar
½ c. granulated sugar
1 egg, beaten
¼ tsp salt
2 c. flour
1 tsp. baking soda
1 tsp. cream of tartar
1 c. flaked coconut
1 t. vanilla
½ t. coconut extract
Directions:
Directions:
Preheat oven to 350º. Cream together shortening, brown sugar, and granulated sugar. Add egg, vanilla, and coconut extract. Separately, sift together salt, flour, baking soda, and cream of tartar, then add coconut. Combine wet and dry ingredients. Roll into small balls, dip tops in water, then in white sugar. Place 2" apart on cookie sheets and bake 15 minutes.
