½ c. shortening or margarine
1 c. sugar
2 eggs
½ c. buttermilk
2 c. flour
1½ tsp. baking soda
½ tsp. baking powder
½ tsp. salt, can omit
3 fully ripe bananas, mashed
½ tsp. lemon extract
½ c. finely chopped nuts (Barbara used cashews)
½ bag (6 oz.) white chocolate baking chips

Directions:
Directions:
Preheat oven to 350º. Cream shortening or margarine and sugar. Add eggs and buttermilk, blend well. Add bananas and lemon extract. Separately mix flour, baking soda, baking powder, and salt, add white chocolate chips and nuts. Gently combine wet and dry ingredients until barely mixed. Spoon into muffin tins lined with paper cups. Bake 25 min or until fully set.
