1 small can pink salmon
2 eggs
saltine crackers
Canola or vegetable oil

Directions:
Directions:
Put salmon and eggs in a bowl and add crushed salting crackers for consistency to shape into patties. Heat oil in a skillet, then cook patties in oil over medium heat, for 10-15 minutes, turning halfway through.

To make enough for 4 people, we increase salmon to one large can *plus* one small can, and add an extra egg.
