1 Tbsp. olive oil
3-4 scallions or green onions, white part only, sliced
¼ cup milk
1 green or red bell pepper, seeded and chopped
8 eggs
1 cup grated cheddar cheese

Directions:
Directions:
Preheat oven to 400º. Heat oil in ovenproof frying pan over medium-low heat. Add veggies and saute about 5 minutes, stirring occasionally. Beat eggs and milk in large bowl and stir in cheese. Pour egg mixture over veggies. Bake 20 minutes, or until top is puffy and brown. Cut into wedges and serve warm.

This is a simple recipe that the Kirkpatricks enjoy... no idea why it's called "Friday Night" other than the recipe book (from the library) called it that.
