6 small zucchini, thickly sliced lengthwise
Olive oil -- enough to drizzle over the raw zucchini pieces and coat them completely when tossed in a bowl
Cayenne pepper to taste
2 large cloves -- or 2 tsp. minced garlic
Parmesan cheese, grated, to taste

Directions:

Toss the sliced zucchini and olive oil together in a large bowl so that zucchini are thoroughly coated.
Heat a large heavy skillet (not non-stick) over medium-high heat and add the coated zucchini, stirring constantly.
Reduce heat to medium-low and stir until zucchini is firm but tender.
Turn off the heat and add the cayenne, garlic, and parmesan by sprinkling them over the zucchini then gently stirring until blended ( you can add Kosher or sea salt to taste if you wish).

Big Jack got his mom to write out this recipe for me since it's one of his favorites. I have made it many times and always think of his mom when I'm making it. It seems fitting to remember Andrea while cooking, as she was an amazing cook -- and person.
