Graham Cracker Crust

10 graham crackers
¼ c. melted butter
¼ c. sugar

Directions:

Crush crackers. Combine with melted butter and sugar. Press over bottom and side of a buttered 9” spring form pan.
 

Cheesecake Filling

2 - 8 oz. pkg. cream cheese
4 eggs
1 c. + 2 T. sugar
1 pint + 1 c. sour cream
½ tsp. vanilla

Directions:
Directions:
Beat two 8 oz. packages cream cheese until smooth. Add 4 eggs, one at a time, beating well between each egg. Add 1 c. sugar, then 1 pint sour cream. Pour into graham cracker crust. Bake at 350 degrees for 1 hour or until center is set. Top with 1 c. sour cream, ½ t. vanilla and 2 T. sugar. Bake 10 minutes more. Let cool and then refrigerate until serving. Serve with fruit pie filling or thickened fruit, if desired.
