1 c sifted Softasilk or 1 c sifted Gold Medal flour
⅞ c sugar, granulated
1½ c egg whites (12)
1½ t cream of tarter
¼ t salt
1½ t vanilla
½ t almond extract
¾ c sugar, granulated

Directions:
Directions:
Measure and sift together 3 times: flour and sugar. Measure into large mixing bowl: egg whites, cream of tartar, salt, vanilla and almond extract. Beat with wire whip until foamy. Gradually add sugar 2 T at a time. Continue beating until meringue holds stiff peaks. Sift the flour-sugar mixture gradually over the meringue. Fold in gently just until the flour-sugar mixture disappears. Put batter into an ungreased angel food cake pan. Gently cut through batter with a knife. Bake at 375 degrees for 30 to 35 minutes. When cake tests done, invert and place on cake rack. Let stand until cold. This cake is "light as air and fluffy as a cloud."

Recipe is from "Betty Crocker's Picture Cook Book," Minneapolis, MN: General Mills, Inc, 1950. It is very similar to the cake Anna used to make ahead of time, freeze, and serve to company.

FAMILY STORY - ALWAYS PREPARED FOR COMPANY

As Mary Lou and Nina were talking, Mary Lou remembered that Grandma Anna always kept an angel food cake in her freezer in case she had company and needed a dessert. I remembered then the many angel food cakes Grandma served. I also recall watching her make those cakes and telling me how to make the batter. The important thing was to beat those eggs long enough to have a perfect cake. Mary Lou said she has the angel food cake pan that belonged to Grandma Anna Hopp. The recipe was found by Mary Lou in Helen Wolf's recipe box.
