¼ cup warm water
1 pkg dry yeast
1 tsp sugar

½ cup milk, scalded and cooled to lukewarm
1 egg
1 ½ cup flour
¼ tsp salt
2 tbsp melted butter

Directions:
Directions:
Combine warm water, yeast, and sugar in a mixing bowl; let set for 10 minutes. Add milk and egg, mix well. Add flour, salt and butter and mix vigorously until butter is smooth. Cover bowl with towel and set in warm draft free place for 1 hour or more until batter has doubled in size. Stir batter to deflate it. Heat skillet to moderate heat. Arrange well greased crumpet rings on skillet and let them warm. Drop a heaping tablespoon of batter into each ring. When crumpets begin to bubble and bottoms are slightly brown, remove rings, turn crumpets and brown second side. Serve hot.
