1 medium eggplant, pealed and diced
1 clove of garlic, minced
1 small onion, thinly sliced
2 tbsp. olive oil
1 green pepper, sliced
1 medium zucchini, sliced
1 tsp. salt
¼ tsp pepper
½ tsp. oregano
1-16 oz can stewed tomatoes, undrained

Directions:
Directions:
In casserole dish, add oil, eggplant, garlic, and onion. Bake on high for 4 minutes. Add zucchini and green peppers and stir. Combine tomatoes, oregano, salt, and pepper. Pour onto vegetables and mix. Recover and bake on high for 8-10 minutes.
