6-8 russet potatoes, peeled and cut into thin sticks
2-3 tbsp unsalted butter
2 yellow onions, sliced thin
1-2 cans anchovy fillets
1½ cup light cream

Directions:
Directions:
Preheat oven to 400º
Sauté the onions in half of the butter.
Drain the anchovies and cut into pieces, reserving a little of the anchovy liquid.
In a greased baking dish, layer the potatoes, onions, and anchovies, with the first and last layer potatoes. Dot with remaining butter on top.
Pour the reserved anchovy liquid and half of the cream over the potato mixture.
Bake in the 400º oven for 20 minutes. Pour in the remaining cream and bake for another 30 minutes, until potatoes are tender.
