Several boneless skinless chicken breast
Candy's corn tortillas
Onions
Mild cheddar cheese.
A big thing of sour cream

Directions:
Directions:
1 - Bake chicken breast somehow then cut into small chunks, or shred.
2 - In a large bowl mix chicken, onions (diced), shredded cheese and sour cream in a big bowl. No exact amounts, just add a little of each
until in looks like a good ratio.
3 - Keep in mind the cheese will melt, so don't overdo the sour cream or it will be too runny.
4- -Fry up the Candy's Corn Tortillas on the stove. For some reason Candy's has the best flavor. I don't like any other tortilla for this.
5 - Fry up a lot of them.
6 - Pre-heat oven to 350º
7 - Fill tortillas and put in something that can go in the oven.
8 - Bake for a while.
9 - Decide you are too hungry to wait any longer.
10 - Microwave to heat up the rest of the way.
11 - Enjoy!
12 - Not, no enchilada sauce. Just eat them as is!

My mom always made enchiladas like this. They are non-traditional but so yummy! I always salt them a bit when I throw them in the microwave.
