6 large pork chops
4 large green peppers – seeded and sliced into rings
1 (4 oz) can of mushrooms (reserving liquid)
3 tbsp oil
1 clove garlic
2 tbsp tomato paste
¾ cup tomato juice
Salt and pepper

Directions:
Preheat oven to 350º
Sauté garlic in oil in a large Dutch oven and then discard garlic – add pork chops, brown nicely on both sides and sprinkle with salt and pepper – remove chops to a platter - add tomato paste to liquid drained from mushrooms – add enough water to this to make ½ cup – now add tomato juice and stir to make a smooth sauce – pour into Dutch oven reserving ½ cup of this sauce – add green peppers and mushrooms and sprinkle with salt and pepper – top with pork chops –carefully pour the ½ cup reserved sauce over the pork chops – cover and bake for 1 hour 15 min
