Simple Eggplant Casserole Recipe

2 medium eggplants
2 medium to large size onions sliced
2 cloves garlic sliced
1/3 cup olive oil
Mushrooms (if desired)
2 tbsp flour
2 cans tomatoes
1 to 2 tsp brown sugar
1 to 2 tsp basil
Salt and pepper to taste

Preheat oven to 375║
Slice but do not peel eggplant and parboil in heavily salted water for 10 min - drain well - sautÚ onions and garlic in olive oil - add mushrooms if desired - add flour, tomatoes, sugar, seasoning and simmer until mixture thickens - in lightly greased casserole, combine eggplant and tomato mixtures - sprinkle with Parmesan cheese if desired - place in the oven and bake for 30 min
