1 (3 to 4 lb) chicken
6 ears of fresh corn or 2 cans whole Niblets corn
1 chopped onion
4 hard cooked eggs
1 tsp parsley flakes or fresh parsley
Salt and pepper to taste

Directions:
Directions:
Cook chicken in a large pot, covering with water - add onion, parsley, salt, and pepper - cover and cook until tender - remove chicken from bones and cut the chicken into bite size pieces - put chicken back into broth and simmer, add chopped egg and corn - allow about 12 min for corn to cook then remove from pot and cut the corn off the cob - return corn kernels to pot for about 5 more minutes
