1 1/4 cup flour
1 tsp baking soda
2 eggs (use good quality)
1/2 cup oil (use Crisco Vegetable Oil)
1 scant cup sugar
2 ripe bananas, mashed
1/4 + cup chopped walnuts
oil spray

Directions:
Directions:
1. Sift together flour and baking soda
2. Mix together eggs and sugar; add oil, then mix again
3. Add mashed bananas and chopped walnuts
4. Add liquid to dry ingredients, stir until all moistened; do not overtax
5. spray foil loaf pans and pour in batter; sit on top of pan for spillage
6. Bake at 350F for one hour; however, check as it may take up to 10 minutes longer depending on oven

I usually make 3 loaves at a time and put on pan
