1 lb ground beef
2-6 garlic cloves, minced
1 medium yellow onion, chopped
2 cans (15 oz each) chopped stewed tomatoes (do not drain)
2 cups beef broth
4 tbsp chili powder
2 tsp ground cumin
2 tsp dried oregano
1/4 tsp (or more) cayenne pepper (optional)
2 cans (15 oz each) pinto beans, well drained (can also use kidney or black beans)
Cheddar cheese (optional)
Sour Cream (optional)

Directions:
Directions:
1. In a large saucepan/pot, cook ground beef, garlic, and onion over medium heat, stirring until beef is browned (about 10 min). Drain well
2. Stir tomatoes (with liquid), beef broth, chili powder, cumin, oregano, and cayenne pepper into beef mixture
3. Reduce heat to low. Cover, simmer, stirring occasionally for 1 hour.
4. Add pinto beans. Cook, stirring occasionally for 15 min longer
5. Serve warm with cheddar and sour cream, if desired
6. Try not to eat it all in 1 sitting!

After I was married I signed up for a recipe collection through the mail. This was one of the recipes that quickly became a favorite! Now that I'm not married, I freeze half to 3/4 of it in individual containers so I can have some all winter long. But I still make it 2-3 times every winter because I love it so much!
