1 tsp ground cumin
1 tsp ground cinnamon
1 tsp salt
1/2 tsp ground black pepper
1/2 tsp ground allspice
1/4 tsp garlic powder
1/4 tsp chili powder
2 pork tenderloins (1-1 1/2 lbs each) trimmed of visible fat
2 tsp extra virgin olive oil
4 Tbsp honey
1 Tbsp minced garlic
3 tsp hot pepper sauce

Pre-heat the oven to 350º Lightly spray roasting pan with non-stick spray.

Mix all dry seasonings in a small bowl. Rub the tenderloins with the olive oil. Then rub the tenderloins with the spice mixture. Let rest for 10-15 minutes.

Meanwhile, in a small bowl combine the honey, garlic, and hot pepper sauce. Set aside.

Heat a non stick skillet over medium high heat. Brown the pork on all sides (about 1 min per side). Transfer the pork to the prepared roasting pan and evenly coat with the honey mixture.

Roast in the oven for about 30 min when a thermometer reads 160ºF. Remove from oven and cover with foil. Let rest for 10 min. Transfer to a cutting board and slice thin.
