4 medium sized zucchini
Oil for sauté
¼ cup onion chopped
2 eggs
8 crackers
8 oz corn
Grated cheese
Directions:
Directions:
1. Preheat oven to 350º
2. Boil zucchini for 8 min – drain cool – split – scoop out pulp from zucchini
3. Sauté onion and zucchini pulp in oil – add eggs, crackers, and corn – mix well - put back into zucchini shell and
grate cheese over the top – put in preheated oven and bake for 30 min
