2 lb. pork tenderloin
1 tsp. thyme
salt/pepper
2 tsp. garlic powder
1 (18oz) apricot preserves
2 Tb. honey
¼ cup dry sherry

Directions:
Directions:
Preheat oven to 350º. Season loin with salt, pepper, thyme. Combine other ingredients in separate bowl. Roast 30-40 minutes. Remove and brush with apricot sauce. Continue roasting, basting occasionally with sauce, until pork no longer pink (15 minutes).
