1/4 c plus 3 T extra-virgin olive oil
1 head cauliflower (purple is fun and I believe it is milder than the white kind), green leaves discarded
1 tsp pink Himalayan salt
1 T fresh lemon juice (or to taste)
1 T drained capers
1 tsp monk-fruit sweetener or 1 packet stevia
1 c fresh parsley
1/4 tsp black pepper

Directions:

preheat oven to 450 F

lightly oil 9 inch pie plate

Remove only the core from the cauliflower, leaving head intact, then place in baking dish, core-side down

Drizzle 3 T olive oil over cauliflower
Sprinkle with 1/2 tsp salt

Bake until tender, about 1 hour (check tenderness periodically)
Cauliflower should be tender and somewhat blackened

Dressing: Whisk together lemon juice, capers, sweetener, remaining salt, optional pepper and remaining oil

Drizzle dressing over the cauliflower before serving, sprinkle with parsley
