1 pkg frozen chopped spinach; thawed and drained
½ cup chopped carrots
1 tbsp finely chopped onions
½ cup mayonnaise
¼ tsp ground nutmeg
¼ tsp salt
4 oz (1 cup) shredded Swiss Cheese
1 to 17.25 oz puffed pastry sheets; thawed
1 egg; lightly beaten
1 tbsp water

1. Preheat oven to 425º
2. Cover cookie sheet with parchment paper
3. Place drained spinach on paper towels and press to remove excess moisture
4. Chop onions and carrots with a chopper
5. Place spinach, carrots, onions, mayo, seasoning, and cheese in a bowl; stir
6. Lightly sprinkle cutting board with flour
7. Using a floured rolling pin, roll one pastry sheet in a 12" square
8. **wrap second pastry sheet in plastic wrap and refrigerate until ready to use**
9. Cut rolled pastry into sixteen 3" squares using a pizza cutter; do not separate the squares
10. Using a small scoop, place a "scant" of spinach mixture into each square
11. Combine egg and water
12. Using a pastry brush, brush egg mixture over the cut lines of pastry and around the edges of the large square
13. For each appetizer, bring two opposite corners of each square up over the filling
15. Pinch together firmly and twist
16. Place on baking stone
17. Brush each with egg mixture
18. Bake 17 to 18 minutes or till golden brown
19. Remove to a serving platter - serve warm
