2 medium boneless chicken breast
2 medium sweet or white onions, chopped
4-6 stalks of celery, chopped
4-6 peeled carrots, chopped
12 cups of chicken broth
1 package of No Yolks egg noodles
1 tbsp. olive oil
salt
pepper
ground Italian seasoning

Directions:
Directions:
Season chicken breast with Italian seasoning and bake @ 350 for 30-35 minutes. Set aside to cool.
In a large soup pot, over medium-high heat, add olive oil, onions, celery, and carrots.
Saute vegetables until they are soft, about 10 minutes.
Chop and add chicken breast to the pot along with any rendered chicken juice from the pan.
Add chicken broth to pot and bring to a boil.
Next add 1/2 - 1 package of No Yolks egg noodles (depending on how noodlely you like your soup) salt, pepper, and ground italian seasoning to reflect your desired taste.
Return to a boil for 12 additional minutes.
