A Beach Week Favorite


Ingredients:

1 can (15 oz.) Black beans, drained
8 oz. Cream cheese, cut into thin slices
1 Small red onion, chopped
1 jar Robert Rothschild Raspberry Salsa
8 oz. Monterey Jack cheese, grated

Directions:
Directions:
Preheat oven to 325º. In an oven safe casserole or quiche dish, layer ingredients as listed above starting with the black beans. Bake in oven for 20-30 minutes or until bubbly.
Serve with tortilla chips.

If you can't find the raspberry salsa you can substitute any fruity salsa, mango is especially good. When we can find it we buy the spicy raspberry salsa.
