Mushroom Prosciutto Chicken Recipe

2 skinless, boneless chicken breasts
4-6 ounces mushrooms
2 Scallions
2 tablespoons mushroom stock concentrate
1 tablespoon butter
2 tablespoons sour cream
4 slices Prosciutto

Directions:
Directions:
Pat chicken dry with paper towels
Lay two slices of prosciutto beside one another on a flat surface
Tightly roll prosciutto around chicken. Repeat with remaining chicken.
Heat a drizzle of vegetable oil in frying pan
Over medium high heat sear chicken until browned about 2 minutes per side.
Put chicken on lightly oiled baking sheet
Roast on top rack at 425 degrees 15-20 minutes until chicken is cooked through. Set aside.
Saute mushrooms and scallion whites in a frying pan with a drizzle of oil. Salt and pepper to taste.
Stir in stock concentrate and 1/4 cup water. Cook until slightly thickened 2-3 minutes
Turn off teat. Stir in 1 tablespoon butter and 2 tablespoons sour cream. Season with salt and pepper
Spoon sauce over chicken
