Caramel Popcorn Recipe

8 cups popped corn
¾ cup brown sugar
6 Tablespoons butter (or margarine, but I use butter)
3 Tablespoons light corn syrup
¼ teaspoon salt
¼ teaspoon baking soda
¼ teaspoon vanilla

Place popcorn in 9X13 baking dish (remove any kernels that didn’t pop)

Measure sugar, syrup, butter and salt into saucepan cook at medium heat, stirring until boils. When mixture boils stop stirring, cook 5 minutes. Remove from burner.

Stir in baking soda and vanilla and pour over popcorn, stirring to coat.
Put pan in 300º oven for 15 min
Remove and stir (soft spatula works well)
Return to oven for 5-10 additional min. Stir.
Remove from pan onto waxed paper (I expect foil would work too) to cool

Many years when John and Charlotte were in elementary school we gave this as teacher gifts. Now I use it mainly as a snack for game night or a yummy make-ahead snack for vacation.
