1 prime standing rib roast (7 lbs, 3 to 4 bones)
1 tbsp. kosher salt

Remove the roast from the fridge 2 hours before cooking. Pat the roast dry with paper towels and season generously with salt, being sure to coat the sides, ends, and the ribs below. Place the roast in a roasting pan.
Arrange rack in the middle of the oven and heat to 500°F. Oven-sear the roast for 15 minutes. The roast is going to put off a fair amount of fat and there will be smoke.
Reduce the oven temperature to 325°F and cook for 13 minutes per pound. Larger roasts can take a total of 1 1/2 to 2 hours. Cook the prime rib to 115°F for rare and 120°F to 130°F for medium — remember that there will be carryover cooking as the roast rests.
Rest the roast before carving. Cover in aluminum foil and rest for 30 minutes.
