• 8 pieces thawed chicken - (2 breasts, 2 legs, 2 thighs, 2 wings)
• 1 teaspoon black pepper
• 1 teaspoon salt
• 2 teaspoons Old Bay Seasoning
• 2 cups plain or self-rising flour (Use whatever you have in the pantry. Really doesn’t matter.)
• 2 ½ quarts of cooking oil (I use Canola or Olive Oil. Neither is cheap, but both are some of healthiest and make the chicken taste great.)
• 1 gallon zip lock bag
*Everything except the zip lock bag is approximate.

Thoroughly wash the chicken pieces in cool water. Lay all pieces on a flat pan (cookie sheet, clean counter). Sprinkle each piece on both sides with salt, pepper, ½ of the Old Bay seasoning. Pour flour into zip lock bag. Place 4 pieces of chicken into bag. Shake thoroughly. Remove from zip lock bag. Shake excess flour from each piece. Place to the side on clean sheet. Do the same with the remaining chicken pieces. Heat oil in a large pot (Dutch oven is great) to 350Ί F (175Ί C). Toss a couple of drops of water in heated oil, if the oil crackles back it’s ready. Add all the chicken to the pan and cook for 10 minutes. Turn chicken pieces and cook for another 10-15 minutes. When the chicken pieces are kind floating at the top of the oil, it’s ready. Remove chicken from the oil and transfer to a cooling rack set over a paper towel lined baking sheet. Let sit for 10 minutes, sprinkle with remaining Old Bay Seasoning, and serve.
