Crust:
1 ½ cups zwieback crumbs
3 Tablespoons sugar
3 Tablespoons melted butter or margarine

Cheesecake:
2 - 8oz cream cheese softened
1 cup light cream
1 cup canned pumpkin
¾ cup sugar
4 egg yolks
3 tablespoons all purpose flour
1 teaspoon vanilla
1 teaspoon ground cinnamon
½ teaspoon ground ginger
½ teaspoon ground nutmeg
¼ teaspoon salt

Topping:
1 cup sour cream
2 Tablespoons sugar
½ teaspoon vanilla

Directions:

Crust:
Combine all ingredients and press into bottom and 2 inches up sides of 9inch springform pan.
Bake in 325º oven for 5 minutes.

Cheesecake:
In Large mixing bowl - combine all except 4 eggs.
Beat all till smooth then fold in 4 stiff beaten egg whites.
Put into prepared crust.
Bake at 325º oven for 1 hour.



Topping:
Combine sour cream, sugar and vanilla and spread over cheesecake.
Bake 5 more minutes. Chill thoroughly before serving.
