2 Tbsp olive oil
4 Tbsp butter
4-5 garlic cloves, minced (or 1/2 Tbsp minced garlic)
1 1/4 lbs. large shrimp, shelled
Salt and pepper to taste
1/2 cup dry white wine
1/2 tsp crushed red pepper flakes
2 Tbsp lemon juice
1/4 cup chopped parsley

Directions:

1. Heat olive oil and 2 Tbsp of butter in large skillet. Add garlic and saute until fragrant (about 30 seconds to 1 minute). Add shrimp and season with salt and pepper to taste. Saute for 1-2 minutes on one side (until just turning pink), then flip.

2. Pour in the wine, add red pepper flakes and bring to a simmer for 1-2 minutes or until wine is reduced by 1/2 and the shrimp is cooked through (don't over cook the shrimp).

3. Stir in the remaining butter, the lemon juice and the parsley. Take of heat immediately.

4. Serve over rice, pasta, garlic bread, or steamed cauliflower, broccoli, or zucchini noodles. Garnish with grated Parmesan cheese.

Easy and delicious. Be sure to start the pasta prep time to correlate with finishing the scampi. I personally don't measure the wine, a generous pour of about a cup provides more yummy sauce. Just be sure to adjust spices accordingly.
