The Beans |

Ingredients: 1 3/4 cup kidney beans 1 cup pinto beans 1 cup black beans 12 cups water 2 tbsp salt

Directions:1. Fill a large microwavable bowl with 12 cups water, add salt and all the beans 2. Microwave on high for 15 minutes and let stand for 90 minutes 3. Refill bowl to 12 cup level 4. Empty all beans and cooking water to a large pot, bring to a boil and cook at a slow rolling boil for 90 minutes 5. Let cool reserving liquids set aside |

Ingredients: 1 lb sirloin steak cut into 3.4 inch bits 1 lb ground beef 3 tbsp chili powder 1 tsp salt 1/2 tsp pepper 1/2 tsp cumin

Directions:1. Add half spices to sirloin and half to ground beef mixing well with your hands 2. Set aside and let stand 20 minutes or more 3. Add to a large stock pot and brown |

Ingredients: 2 large green peppers seeded and chopped 1 yellow pepper seeded and chopped 1 red pepper seeded and chopped 1 large jalapeno pepper seeded and diced 1 cup onion chopped 2 cloves garlic diced 60 oz diced tomatoes 6 oz tomato paste 12 oz beer 32 oz beef broth 3 tbsp chili powder 1 1/2 tbsp salt 1 tsp black pepper 1/2 tsp cinnamon 1 tbsp paprika 1 tbsp oregano 1 bay leaf 1 tbsp sugar 1 tbsp butter 1 tbsp oil

Directions:1. Add butter and oil to skillet ad peppers, onion and garlic and saute until soft 2. Add pepper mixture to stock pot with meat 3.Add all remaining ingredients to stock pot and mix to blend 4. cook on low for 45 minutes |

Notes: I began working on my chili receipt around 1985. I finally wrote this final product in 2013. We make our soups in large batches and freeze in two serving containers making it more of a good time instead of a chore. Of coarse this receipt can be made in smaller batches, but for that I will let you do the math!
