8 or 9 large potatoes
1 cup sweet salad cubes
2 medium onions, chopped
1/2 cup celery, chopped
5 hard boiled eggs, chopped
Salt to taste
Pepper to taste
2 cups mayonnaise
3 or 4 tbsp mustard
2 tbsp vinegar
2 tsp sugar

Directions:
Directions:
Peel, cube and rinse potatoes. Put in kettle with water over the potatoes and
boil until they just start to become tender. Do not overcook as they will be mushy.
Drain Potatoes. In a bowl mix all of the remaining ingredients together. Pour over potatoes
and fold in until all are mixed well.
Cover and refrigerate overnight. Stir and taste.

*** You may have to adjust the amounts of salt, pepper, vinegar and sugar. This potato salad
is creamy and may need a little more mayonnaise after setting overnight. The potatoes absorb a lot of flavor.
