2 pounds mussels
3 tbsp. whole butter
1/2 oz. white wine
1 c. fish stock

Directions:

Clean mussels by rinsing them in cold water and removing their beards. Chop shallots finely. In a large saute pan place butter and shallots over medium heat. Add mussels. As the shells begin to open (in about 2 min) pour in the wine and let mussels simmer in the liquid for 1 min. Add fish stock. Cover Continue to cook for 2 min. Arrange symmetrically on serving dish and pour on the cooking liquid.
