6 strips of Bacon, diced and fried crisp
4 large Onions, chopped. Cook until translucent in bacon fat
2 whole Eggs, plus 1 Egg yolk, slightly beaten
3/4 cup Sour Cream
Salt and Pepper to taste
1 tsp. Green Onions, green tops only, minced
Pinch of Caraway Seeds
2 Pie Crusts

Preheat oven to 400 degrees Place pie crusts in pie pans. Prick all over. Place pie pans in the preheated oven for 10 minutes. Mix all the ingredients together. Pour into the partially cooked pie shells, lowering the temperature to 350 degrees. Bake until set, about 15 minutes. Cut into thin slices. Serve immediately. Serves 16. Makes a good luncheon dish with a tossed salad. It is equally good at a buffet.

I believe this recipe came from a potluck church supper, probably from Home St. Presbyterian Church in the Bronx when I was a teenager.
