8 cups rhubarb (peeled)
1 egg, beaten
1¾ cups sugar
3 T. tapioca
1-2 qts. frozen strawberries
⅓ cup water (if needed)
2 T. cornstarch

Directions:
In a arge bowl mix together the rhubarb, beaten egg, sugar and tapioca. (If desired, soak rhubarb in hot water for 5-10 minutes to take off the bitter taste before mixing with ingredients). In a 3-quart saucepan add strawberries and ¼ cup sugar (if not added before freezing). Heat on high to soften and add water (if needed) and cornstarch. Mix berries and rhubarb mixture together and pour into 2 pie crusts. Dot with butter and cover with the top crusts. Bake in a 350º preheated oven for 45 minutes to 1 hour and 15 minutes.
