3 T. butter, softened
3 T. granulated Swerve
1/2 t. vanilla extract
1 c. almond flour, finely ground
1 T. coconut flour
1 egg white


Directions:
Directions:
1. Cream the butter, Swerve and vanilla extract together in a bowl.
2. Mix in the almond flour and coconut flour.
3. Crack the egg white into the bowl and mix until dough forms.
4. Let the dough rest for 1-2 minutes, then form it into a log and wrap in plastic wrap.
5. Refrigerate for at least an hour.
6. Preheat oven to 325.
7. Slice dough into 1/4 inch slices
8. Bake on parchment paper for approximately 15 minutes

****This recipe can easily be altered by:

1.) Matcha - Mix one tablespoon matcha powder into flour mixture

2.) Apricot & Almond - At very end, mix in three tablespoons of small diced dried apricots and 2 tablespoons of sliced almonds into dough

3.) Chocolate Chip - 1/4 cup Lily's sugar free dark chocolate baking chips
